Carrot Cake
Ingredients
- 1 1/4 c unsweetened applesauce
- 2 c granulated sugar
- 3 eggs
- 2 c all-purpose flour
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 c grated carrots
- 1 c shredded sweetened coconut
- 1 tsp vanilla
- 1 c crushed pineapple
- 1 c chopped nuts
- 1/2 c raisins
Instructions
- Preheat oven to 350 deg F
- Combine applesauce, sugar, and eggs
- Add flour, baking soda and baking powder
- Stir in remaining ingredients
- Pour into lightly greased 9"x13", two 9" pans, or three 8" pans
- Bake for 35-40 minutes for 9"x13" and 9" pans; 25-30 minutes for 8" pans
